My Salad Quest: Taco Salad
Sundays are Taco Salad Day. I prepare everything in the morning before church, so when we're home and hungry, we simply pull out the ingredients and make salads! Here is a list of the ingredients I prepare:
Romaine lettuce
Mixed greens
Cilantro
Kidney beans
Cherry tomatoes
Chopped avocado
Crushed tortilla chips
Salsa
A healthy ranch dressing
Other not-so-healthy ingredients we enjoy:
Ground beef, browned w/ taco seasoning added
Grated cheese
In large bowls, assemble salads with LOTS of greens, adding toppings of choice. Keep the beef and cheese to a minimum-- you really don't need much.
