Our Favorite Chocolate Chip Cookies

These are so delicious!  Even though they are made with healthier grains and sweeteners, they are still cookies, so they should be eaten in moderation.  My family LOVES these, and has requested them many times over the years.

1 cup butter, softened
1 cup honey crystals (or substitute granulated sugar)
1 cup sucanat (or substitute brown sugar)
2 eggs
1 tsp. vanilla
3 cups fresh ground whole grain flour (I grind Spelt & Kamut with a Wonder Mill, but you can substitute about 2 1/2 cups whole wheat flour)
1/2 cup flax seed, ground
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 1/2 cups unsweetened dried coconut (not the sugary stuff)
2 cups chocolate chips

Cream the butter, honey crystals, and sucanat, making a grainy paste.  Add eggs and vanilla, and beat well.  Mix dry ingredients together, and blend into creamed mixture.  Stir in coconut and chocolate chips.  Make into one-inch balls (or whatever size you like), and place on ungreased cookie sheet, two inches apart.  Bake at 350 degrees for about 10 minutes or until done to your liking.  We like them soft and chewy, so I take them out as soon as they look golden.  Let cool for a minute or two, then transfer to a wire rack.
